Gaz has a variety of different types based on the amount of pistachios and brain of almonds and vegetable matter used. Its appearance is divided into 3 groups of Ardi(Floury) Gaz, Loqmeh(morsel) gaz and Sohani gaz. Based on the amount of pistachios or almonds, four groups, (Exclusive, special, custom and ordinary) categories are divided. The classification based on the herbal material used in this gaz includes gaz angebin, gaz saffron and other essential oils.
Gaz Isfahan is the best-quality Gaz and has more than 450 years of age. According to the words "Gaz Isfahan" since the Safavid period, as well as the reappearance of Iranian art and culture in Isfahan. The value of Angebin Gaz is usually 4 to 5 times the value of ordinary gaz. The Angebin Gaz producing factor is a small insect, almost as large as a mosquito that houses a stem or leaves of the angebin gaz tree. Then it feeds on the plant and produces nectar. This action means the production of natural sugars by the insect, which may be the same as producing honey in the honey bee. Gaz Angebin is one of the few fructose sugars in nature. The original type of this sweet, which is still custom made, contains a small percentage of Gaz Angebin's precious extant.
